I am going to do whatever I can to attempt to convince you that you absolutely HAVE to make this Slow Cooker Beef Roast… like today. No – tomorrow, because first you've got to either buy or thaw a hunk of meat. This meal is seriously one of the easiest and most loved meals that I make regularly for my family.

The roast is consistently tender (like pull apart with a fork) and easy for little people without all their teeth to chew. These photographs are of a rump roast which is one of the tougher cuts of meat. It is even more moist & apt to falling apart when a more tender cut of meat (e.g. sirloin tip roast) is used.

Given the circumstances (soon to be explained) I am going to ask that you don't completely judge this recipe off the picture. Just trust me. Try it. This is hands down the best recipe for getting roasts to turn out perfectly.

The photos might have been better if I started the roast at 0400 (but I couldn't do that because I was holding a teething one year old) so it was done earlier in the day. And they might have been better if the sunlight came out as forecasted; the lighting was so low that I opened the sliding patio door (it was 30 degrees Farenheight outside) to get just a little more light …. and hence got to listen to my three year old yell, "Mom! You are letting in cold air. You are wasting the money Dad makes!" over and over and over again while I took the pictures. Meanwhile, my one year old was eating the rosemary right off the top of the roast by the fistful. Yikes! I also photographed their favorite stuffed animals (I'll spare you those pictures) as this made both of them squeal in delight.

Quick funny store for you all: My husband and I call each other "babe". Not sure when it started, but it did. As my husband, William, was dishing up his roast & potatoes he said, "Wow! This looks amazing babe."

Our three year old daughter, Avah, then proceeded to tell me that, "Dinner is amazing babe," and "I love this dinner babe," and "this is my favorite food babe," for all of dinner. No amount of telling her my name is "Mom" would get her to stop. It was however, nice to be told over and over again how great dinner was. She ate an unusually large amount that night because she is determined to get "bigger" so she can face forward in the car. Only 9 pounds to go 😉

We love to eat this roast over whipped potatoes, cauliflower, or root vegetables. My favorite way to cook any of these is to simply pressure cook them in the Instant Pot for 12-15 minutes and the whip them with this Immersion Hand Blender. Be sure to keep the small amount of liquid used to pressure cook the vegetables in the pot when you whip them because it contains important nutrients & flavor.

As for the gravy, I just pour the drippings/ broth/ marinade (e.g. all the liquid) from the bottom of the slow cooker into a saucepan on the stove. Add a bit of tapioca starch, whisk to combine, and heat while stirring constantly until it is thick. It has the most amazing flavor and those extra calories are great for growing kids.

Prep Time 10 minutes

Cook Time 6 hours

Total Time 6 hours 10 minutes

Servings 10 people

Calories 339 kcal

  • 4-5 pound beef roast rump, shoulder, or sirloin tip
  • 1/2 cup coconut aminos or soy sauce
  • 1/2 cup refined coconut oil or tallow
  • 1/4 cup red wine vinegar
  • 1/4 cup balsamic vinegar
  • 8 cloves garlic minced
  • 1 Tbsp dried rosemary
  • 2 tsp black pepper
  1. Thaw roast completely. Grease bottom of slow cooker. Place meat in slow cooker.

  2. Add coconut oil, coconut aminos, & vinegars to slow cooker.

  3. Sprinkle rosemary, garlic, & pepper on top.

  4. Put the lid on slow cooker and cook on low for 6-8 hours. Do NOT take the lid off until it has cooked for 6-8 hours!!
